Short Maceration Orange Wine
 
Apricot  -  Ripe Grapefruit  -  Dried Apple
 
One of the hardest years in the vineyard that led to extensive crop loss due to mildew, eventually rewarded us with some amazing fruit that matured quickly in the heat leading to full, ripe fruit flavours. 
 
The destemmed whole berries were crushed by foot and the Sauvignon Blanc was fermented as pure must with the Sémilion fermented on the skins for 4 days to add a little structure before the two were combined. To balance this wine we did bâtonnage for two weeks at the end of fermentation and then it was left on the lees for 9  months in steel tanks before bottling. 
 
Aurum is a medium plus body light orange wine with expressive dried fruit and apricot aroma with well integrated fine tannins that support this gastronomic wine. It would pair well with robust summer salads as well as fatty fish dishes. 
 
Serving suggestion, 8-14 Degrees Celsius in a white wine glass.
