Sustainability Focused Spirits & Infusions
Once we finish winemaking, we are left with a pumice that is still rich in flavour, sugars and juice. Many winemakers simply throw it away. We have decided to add some water and re-ferment it. Creating a deeply flavoured piquette that can be distilled into a high-quality spirit.
We take that raw spirit and barrel age it or add it directly to some of the organic fruit we grow on the farm and allow it to mature.
