A U R U M

Short Maceration Orange Wine

Orange wine is not a recognised wine style in Bordeaux. It’s so rare, we don’t know of anyone else making it here. We think they should. 

 

Bouquet: Pronounced aromas of ripe stone fruit, dried apple, honey and hay. 

 

Palate: Medium plus body, round acidity and fine tannins with a lingering spicy attack. Ripe apricot, grapefruit and kiwi.  

 

Serving: A gastronomic wine made to pair with rich fish dishes, spicy salads or cheese. Enjoy this wine chilled from a white wine glass.

A N I M A

Heritage Style Bordeaux Blend

Oak barrel ageing for 18 months has integrated the rich complexity into this wine. Ready to drink now, it will easily age well for the next 5 years. 

 

Bouquet: Classic Bordeaux style. Black fruits and an earthy characteristic present with the integrated warm spicy wood.

 

Palate: Full body with fresh acidity backed by chewy tannins. A harmony of black fruits with a long finish which mingles with black olive. 

 

Serving: Decant for one hour and enjoy from a Bordeaux glass. A food wine, this would go well with grilled meats and cheese.

S A N G U I S

Modern Light Cabernet Claret 

Sanguis takes us back to the original style of Bordeaux wine, but it feels so fresh and modern. This extremely drinkable light red wine would make a great accompaniment to spicy food. 

 

Bouquet: Perfumed by generous blackcurrants and black cherry and lavender. 

  

Palate: Medium plus body with a lactic acidity. Fresh raspberries, plush tannins and a lightly spiced back pepper and orange bitters finish. 


Serving: Best enjoyed slightly chilled in a white or small aperture red wine glass. Great to drink alone, but it also pairs well with most Asian or modern European food.

N O V A S

Off Dry Claret

Novas is a one of a kind off-dry natural Claret. The product of spontaneous fermentation. Nature decided that it had reached perfection with a little residual sugar left in the wine to balance the tannins and acidity. It’s very unlikely nature will ever recreate this wine for us.  Get it whilst you can.

 

Bouquet: Expressive dense jammy fruits -  strawberries, red cherry, plums and some violet. 

 

Palate: Medium plus balanced sugar with acidity that leaves a clean finish. Fine tannins. Full of juicy red fruit. 

 

Serving: Best served slightly chilled in a white wine glass. This wine is easy to drink by itself but would also pair well with spicy or slightly sweet food.

R A D I X

Full Bodied Merlot 

Radix is a modern classic, taking the best of heritage Bordeaux wine making and mixing it with organic natural wine making principles. This kind of wine is extremely hard to find from a natural winery. 

 

Bouquet: Balanced aromas of blackcurrants, blackberries and dark cherry with warm spices from the barrel. 

 

Palate: Full bodied, dry wine with fresh acidity and medium fine tannins. Round black fruit stretches into black pepper and dried leaves for a long finish, with an elegant touch of roasted coffee. 

 

Serving: Decant for one hour before drinking from a large Bordeaux glass. This wine is drinking well now but would age well for 5-10 years. A wine for food.
