It was a very hot and dry season, leading to concentrated fruit are balanced by appetising acidity. Loads of bubbles and a rich texture.

Made using the méthode ancestrale, It has nice fine bubbles and a great balance of appetising acidity and fruit flavours. I matured on lees for more than 6 months as I love the round texture and creaminess it brings to the final glasses.

Heritage apples, hand harvested and allowed to ferment naturally. 
We bottled the cider a little early to capture a light fizzy finish. 
We can only make about 150 bottles per year, so this is a rare treat.
