Tasting notes:
Plums - Dark Cherries - Warm Spices
The wine is a bright, open and easy drinking bordeaux blend that has medium tannin and light spicy wood presence.
Dark fruits like plum, black cherry and blackberry give way to brighter fruits like red currants for a long finish.
Grower: Thomas F. Saint-Loubes, Bordeaux.
Winemaking: Ian Hocking, Shuette
Varietals: Cabernet and Merlot
I wanted to create a modern, lighter and fresher style Bordeaux red wine.
To achieve this the grapes were harvested a week earlier than usual, resulting in a lower ABV wine with more freshness that is easier to drink.
After the initial racking the skins were carefully pressed in a small vertical press to ensure medium light tannins.
The wine was moved from steel tanks after 7 months on the lees and put into used 500L oak barrels where they were aged without regular topping up for a further 2.5 years. This process has allowed the wine to soften and bring the dark fruit forward. We choose 70% older neautual barrels and 30% new French oak barrels to give the wine familiar subtle sweet spices and a light smokey aroma whilst not overpowering the fruit.
