Cranberry - Raspberry - Light fizz
It rained every day through the maturation of this vintage. As I followed the evolution of the vintage it was clear we should make a lighter style wines to capitalise on the balance of acidity and bright red fruit flavours.
This very light red (dark rosé in colour) was made by destemming the berries and allowing them to crush themselves under their own weight, racking the juice after 3 hours of maceration and then continuing to rack through the harvest morning. This allowed the juice to filter through the skins picking up colour, texture and essential antioxidants to add aging potential.
Malolactic fermentation and 3 months of lees aging give this wine the structure to stand up well to rich and spicy food without being overpowered. It was bottled with 5g of residual sugar and allowed to re-ferment to give a lightly perlant sparkle to the wine.
Serve at 8-14 Degrees Celsius in a white wine glass.
