An off-dry Cabernet Noir claret with 16.5 g/L residual sugar, fine tannins and refreshing acidity. A spontaneous fermentation that took its own direction.

01 / In the glass

Dense strawberry, red cherry and plum aromas meet a touch of violet. Fine tannins and fresh acidity balance the residual sugar, leaving a clean, juicy red-fruit finish.

Off-dry. Deliberately different.

Serve slightly chilled at 8–12 °C in a white wine glass, with spicy food or dishes with a little sweetness.

02 / In the cellar

Nature chose
the finish.

Destemmed Cabernet Noir macerated on its skins for 24 hours. The free-run juice was gravity-racked without pressing and fermented spontaneously with indigenous yeast.

Fermentation stopped with 16.5 g/L residual sugar. Novas matured for 11 months in stainless steel, with three rackings for clarification before cellulose filtration.

Château Shuette is a working farm in Saint-Loubès, beside the Dordogne. Old vines, deep clay, mineral schist and decades of organic farming shape the estate.

The farm is a living system: vineyard, fruit trees, market garden and wildlife, all sharing the same land.

Delivery and mixed orders

Delivery starts at €10 for one to five bottles and is free from six. Mixed wines count together. Prices shown include French VAT; destination VAT is recalculated at checkout. Non-EU import VAT, excise duty, customs charges and carrier handling fees are payable by the recipient.
