01 / In the glass

Golden fruit.
Bright bubbles.

  • Ripe pear
  • Lemon
  • Pineapple

Ripe pear, lemon and pineapple meet plenty of bubbles and a rich mouthfeel. Appetising acidity balances concentrated fruit and a little residual sugar, with creamy complexity from time on the lees.

Pét-nat. Ready to share.

Serve at 8–14 °C in a white wine glass, with soft cheese, charcuterie or herby pasta.

02 / In the cellar

Organic fruit.
Ancestral bubbles.

Sauvignon Blanc was harvested earlier to balance acidity and alcoholic potential in a hot, dry season. Destemmed fruit was gently pneumatically pressed and allowed to clarify for 24 hours before moving to Shuette’s concrete tanks.

The wine was racked twice and bottled with 16 g/L residual sugar to create its bubbles through the ancestral method. It matured on bottle lees for at least six months before disgorging. The finished wine has 5 g/L residual sugar; no sulphites were added and it was not filtered.

04 / A wine from a place

Bordeaux.
Without the clichés.

Made at Château Shuette from grapes grown by David B. · Pellegrue, Bordeaux. The fruit’s origin is part of the wine’s identity; the winemaking takes place at our working farm in Saint-Loubès.

The farm is a living system: vineyard, fruit trees, market garden and wildlife, all sharing the same land.
